At the end of the foam fermentation process, the wine still doesn’t have the flavours that we are seeking. It is only after a long ageing process in our cool, dark cellars that the unique character of Champagne is revealed. The strength and elegance of our soil appears in full during this period of ageing, and BEAUMONT des CRAYERES offer a highly varied range of cuvées that have been aged for at least three years in our cellars.
