In order to maintain a high level of quality in our wines, it takes meticulous care. The Chef de Cave is able to monitor and guarantee this attention to detail in practice working with a dedicated team of people.
Our vinification processes are separate; in other words we vinify different grapes in separate tanks, with the different parts of the pressing coming from different selected parcels. This separate vinification process is another key factor in quality. It makes it possible to apply a well thought out oenological approach to each cuvée, and will provide a broader range of wines to work with when it comes to the blending process.
For our prestige cuvées, a proportion of our wines are matured in oak barrel. This process gives the wine a more intense flavour, more body in the mouth, and also length. The cask-wood of our casks come from a selection of very fine textured oak from the forest of la Montagne de Reims !
