Veraison

Veraison in Champagne is one of the final stages before harvesting, marking the beginning of ripening.

It is characterised by the gradual colouring of the berries on the grape bunches. Meunier and Pinot Noir berries turn red, while Chardonnay berries take on a more translucent, sometimes golden hue. It takes about 15 days for all the berries to ripen, as they do not ripen simultaneously.

At the same time, sugar levels rise, acidity decreases and aromas develop, signalling the start of the countdown to the harvest.
