At Beaumont des Crayères, pruning is referred to as the ‘founding act’ of the vine. Carried out during its winter rest, it determines the quality of the grapes, the harvest… and the champagne.
This is the first essential step in the new wine-growing campaign.
Pruning requires real expertise: the winegrower observes the vigour of the vine, its potential fertility and the overall balance of the plant. The aim? To find the right balance between vigour and quality while ensuring the plant’s longevity.
At Beaumont des Crayères, we favour the Cordon de Royat method, which is ideal for the Meunier grape variety. This involves a succession of spurs (last year’s wood), each retaining two buds spaced about fifteen centimetres apart. This method ensures harmonious growth and an even distribution of future bunches.
A discreet, winter task… but one that is already shaping the champagnes of tomorrow. 🍾✨
