What is the bottling ?

A crucial stage in champagne production, tirage is the bottling of our blends. This is followed by the second fermentation, which gives the wine its famous bubbles known as “prise de mousse”. A liqueur known as tirage, which is a mixture of still wine, sugar and yeast, is added to the wine. The yeast consumes the sugar and releases alcohol to make the wine sparkling. It also gives the wine new sensory properties.

The rules are well defined in Champagne: the wine may not be drawn before 1 January following the harvest. What’s more, the wine cannot be transferred from one container to another. It must be sold in the same container in which it was drawn.

Once the foam has set, the bottles are put away and placed on their lees, ready for the next stage: maturation.
